As I step into the restaurant on a pleasant Wednesday afternoon, I receive a warm welcome from Peter, the co-owner and founder of Posto 896. He graciously escorts me to my table for lunch and an interview; an engaging story, but also a mouthwatering journey through the menu. The restaurant itself exudes an inviting and friendly ambiance, featuring a stylish, modern industrial design. The tree in the center of the establishment immediately captures my attention, bringing a breath of fresh air to the overall atmosphere. The restaurant proudly features numerous paintings by local artist Ilona Finta, a professional painter originally from Hungary. Those interested in her art can even purchase it. As Peter and I settle down, we get to know one another, discuss the history behind Posto 896, and the nuances of Hungarian cuisine.
Peter's background is unique; he
not only hails from Hungary but also from Szekelyudvarhely, in the southeast region that is known to be one of the most beautiful areas in Transylvania. He goes on to tell me about his time in college in Kolozsvár, Transylvania, and later his studying in Naples for a semester during his senior year. It becomes evident that his passion for Southern Italian cuisine started on his journey to Naples and played a significant role in his partnership with Posto 896’s co-founder, Lorenzo. As I learned from the conversation Peter always wanted to work in the best restaurants in the world. Peter has an inspiring story, but I thoroughly enjoy his account of arriving in Los Angeles over two decades ago and witnessing the evolution of the Hungarian culinary market. During his career, he has worked in some of the most luxurious restaurants and fine dining operations in Beverly Hills. Through our conversation, I gather that most Hungarian restaurants in the US have typically been small, family-owned operations. Peter confirms this and explains that when the owners grow older, these establishments often change hands or close altogether, which makes it difficult for Hungarian cuisine to expand and grow in the US.
While I observe a few departing guests, I notice that Peter is carrying two bowls of tarragon soup – one for me and another for himself. As he hands me a spoon, I eagerly indulge with a slice of bread in my hand. I can't remember the last time I had even had a comforting bowl of tarragon soup, but I am brought back to memories of my grandmother’s own recipe and I immediately feel that this is one of the finest tarragon soups I’ve ever tasted. As we eat our soup, Peter explains Posto 896’s commitment to preserving authentic flavors while accommodating dietary restrictions. Over the years in the US, he has learned to adapt to the rarity of authentic Hungarian ingredients, by finding them in the greater Los Angeles region. In addition, Peter is able to accommodate the Jewish and Muslim community in the Encino area by selecting certain dishes that do not contain pork. While the restaurant does currently offer vegan and vegetarian options, they are mostly on the Italian side to add variety to the menu. Furthermore, they enthusiastically embrace dietary requests, ensuring every guest enjoys an exceptional dining experience.
My eyes light up as I witness the arrival of chicken paprikas and stuffed cabbage from the kitchen. Peter truly indulges me by offering this exquisite array of options, and I feel so fortunate to savor some of the finest Hungarian flavors in the United States. Before leaving, I ask Peter to summarize Posto 896.
